Heat Up Your Casual, Winter Gathering With a Chili Bar

Simple, Hearty Crock Pot (or Top of Stove) Chili


????1 medium to large onion, diced
????1 pound lean, beef stew meat
????2 tablespoons Mexene brand chili powder
????1 (28 ounce) can pinto beans, drained and rinsed
????1 (28 ounce) can red kidney beans, drained and rinsed
????1 (28 ounce) can crushed tomatoes
????2 cups beef broth
????1 (15 ounce) can condensed tomato soup or tomato sauce [optional]
Crock pot directions: Lightly coat the inside of crock pot with cooking oil spray; add all ingredients except the can of tomato soup or tomato sauce, cover and cook on low for 4 hours. Stir in the tomato soup or tomato sauce during the last half hour for thicker, milder chili if desired.

Top of stove directions: Place all ingredients except the can of tomato soup or tomato sauce into a large, nonstick pot, cover and bring to a low boil over medium heat, stirring occasionally. Reduce heat to low and simmer, covered, for 20 minutes. Stir in the tomato soup or tomato sauce for thicker, milder chili if desired, and cook for an additional 5 minutes.


Recipe makes 10-12 servings that are ready to personalize with toppings.
